Ranch dressing is a classic, but unless you go for the less-tasty fat-free version in your grocery store, you're packing on some fat and calories. Substituting fatty ingredients for a healthier alternative sometimes can result in a healthy dressing that's close to the original in taste. This recipe uses cottage cheese as the low-fat component.
* 1 small shallot, peeled
* 3/4 cup nonfat cottage cheese
* 1/4 cup reduced-fat mayonnaise
* 2 tablespoons buttermilk powder
* 2 tablespoons white-wine vinegar
* 1/4 cup nonfat milk
* 1 tablespoon fresh dill, chopped
* 1/4 teaspoon salt
* 1/4 teaspoon freshly ground pepper
Start up your food processor and add the shallot first. Blend it until it's finely chopped, and then add the mayonnaise, buttermilk powder, cottage cheese and vinegar. Let this run until it's nice and smooth. The milk comes next, followed by your spices.
