While some folks love the creamy white dressings and others prefer thin vinaigrettes, there are also those who feel like a salad isn't a salad unless you use a delicious honey mustard dressing. Many honey Dijon dressings you'll get in your local market are loaded with fat and calories, not to mention sugar, high fructose corn syrup and additives. You can avoid this by making your own low-fat version in your kitchen.
* 1-1/2 cup low-fat or light mayonnaise
* 1/4 cup honey
* 2 tablespoons minced onion
* 2 tablespoons lemon juice
* 1 teaspoon minced fresh parsley
* 1 teaspoon Dijon mustard
Blend all of the ingredients in a blender or food processor until it has a thick and creamy consistency. Cover and chill the dressing for at least four hours, and keep it covered longer for best results.
