Avoiding high fat and calorie rich ingredients is one way to make a healthier salad dressing, but adding some genuinely healthy ingredients can push it from simply low-calorie to good-for-you. This is case with this recipe from the Food Network star Rachael Ray. Almonds are actually high in monounsaturated fats, but that's the "good fat." This is what's found in olive oil and can help lower your cholesterol and risk of heart disease. The almonds in this recipe make it a healthy, homemade dressing option.
* 1 clove garlic
* 1/2 cup smoked almonds
* 4 soft sun-dried tomatoes, chopped
* Handful fresh cilantro leaves
* Handful fresh mint leaves
* 3 tablespoons red wine vinegar
* Splash of water, 2 tablespoons
* 1/3 cup extra-virgin olive oil
* Black pepper
Add all of the ingredients except for the water and olive oil to the food processor and blend well. Use the water to thin the dressing out and add the olive oil last while it's blending.
