Skip the greasy fried tortilla chips and dip this tangy salsa with low-calorie endive leaves. This appetizer is sure to please a crowd, but makes an easy snack as well. Scoop away!

4 medium tomato(es), plum seeded and chopped
1/2 medium pepper(s), green, bell diced
1/2 medium pepper(s), orange, bell diced
1 bunch(es) scallion(s) (green onions) chopped
1 medium lime(s) juiced
1 pinch pepper, black ground
1 pinch pepper, cayenne
cilantro, fresh (for garnish)
leaves lettuce, endive (for serving)

Cooking Instructions

Combine all ingredients (except endive and cilantro) in a bowl. Let stand for two minutes so tomatoes can marinate in lime juice. Serve surrounded by endive leaves, and garnish salsa with cilantro.
